Blueberry pie
Gluten, Dairy, Egg, Wheat, and refined/processed sugar FREE
Very easy to make , looks amazing and is DELICIOUS
Crust:
1 Cup Walnuts
2 Cups Pitted Dates soaked
- Place dates and nutes into a food processor and blend until smooth
- Spread crust into a pie dish or spring form pan
Topping:
3 Cups Blueberries (fresh or frozen)
1 1/2 Cups Macadamia nuts
1/2 Cup Pure Maple Syrup
2 Tbl Lemon Juice
2 Tsp ground cardamom or to taste
1/2 tsp Pure Vanilla Extract
Pinch of Salt
3-4 Tbl melted coconut cream
- Place all ingredients in a food processor and blend till smooth
- Spread topping evenly over the crust
- Place in fridge or freezer to set
- Decorate with fresh blueberries, seasonal fruit of choice and edible flowers.
Crust variations: Macadamia nuts and dried apricots, Pecan and Pineapple, Walnuts and Raisons, Almonds and Dried Figs. Add Cocao Nibs and / or powder.
