Ginger Chicken & Vegetables
Gluten and Dairy Free 

INGREDIENTS
500 gm Chicken sliced
2Tbls Ginger minced
3Tbls Tamari
1Tbl Lemon Juice
1 Large Onion
4 Cloves of Garlic
Oil to fry
2 Cups of unsweetend Pineapple Juice
1 Red Capsicum Sliced
1 Zucchini Sliced
1 Green Capsicum Sliced
2Tbls Hemp Flour or Wheat Free Cornflour
2Tbls Water
2 Cups Bean Sprouts
1 Cup  Snow Peas
1/2 Cup Shallots sliced diagonally. 
Sesame oil for taste
 
Method
Marinate chicken in ginger, garlic tamari and lemon juice for 3hrs.
Saute onion till transparent, add chicken, cook 4-5 minute. Add vegies cook 2-3 minute stirring  continuously. Add Pineapple Juice, heat through. 
Mix cornflour / Hemp flour with water to a smooth paste, add to the pan. Add sprouts and snow peas cook for 1 minute. Stir in 1 tsp of sesame oil, taste, add more if needed. Garnish with shallots and serve with rice or rice noodles. Serves 4-6 Adults.
