Green barley ball recipe

We admit at first glance the mere sight of this super dark green powder doesn’t seem to be all that appealing but after understanding its use and health benefits you will have a new found admiration for barley grass powder. Not many green powders make you want to jump out of your seat with excitement, but with the right usability they can be mastered into some nourishing and decadent health giving treats.

The Benefits:

  • Green barley is an ultimate source of plant (non-heme) iron, essential for red blood cell production. Without enough iron we can feel exhausted and fatigued. Non-heme iron sources are more difficult for our bodies to absorb so with the combination of vitamin C rich fruits such as lemon makes for an easier absorption.
  • These goodies are raw, vegan, gluten, dairy, grain and refined sugar free!

 

Ingredients + Method

1.5 tbsp. organic green barley grass powder
½ cup raw walnuts
3 tbsp. melted unrefined coconut oil
2 tbsp. chia seeds
2 tbsp. sesame seeds
3 tbsp. shredded coconut
6 fresh medjool dates
Finely grated rind of 1 lemon
Juice of 1 lemon

Add all ingredients in a food processor and blend until combined. Roll into balls and roll in extra shredded coconut, sesame seeds, chopped raw nuts or leave as is.
