Who would have thought you can make cookies that help to boost a pregnant mother’s milk supply? But there is such a thing, lactation cookies as they are more commonly known are a moist and yummy way to help to boost and maintain a breastfeeding mum’s milk supply. These carrot cake inspired cookies feature brewers’ yeast, flax seeds, whole rolled oats, sesame seeds and carrots all of which help to support milk production for breastfeeding mothers.

  • 1 cup whole rolled oats
  • 1/2 cup raw sunflower seeds
  • 1/4 cup unrefined coconut oil
  • 1/4 cup ground flaxseed
  • 2 tbsp brewers yeast
  • 1 carrot peeled and grated
  • 3 tbsp maple syrup
  • 2 tbsp sesame seeds
  • 1 free range egg
  • 2 heaped tbsp unhulled tahini
  • 1/2 tsp baking soda
  • 1 tsp powdered cinnamon
  • 2 tsp of your favourite probiotic foods blend

Preheat oven to 180 degrees and line a baking tray with baking paper. Process the sunflower seeds until it resembles fine sand. Add the oats and process to make a flour. Mix in the remaining dry ingredients. Add in the oil, sesame seeds, maple syrup, egg, tahini, grated carrot, sultanas and mix well. Roll into balls, place on baking sheet, lightly flatten and bake for 15 minutes or until golden. Makes about 20 small biscuits.
