AN AUSSIE ICON ??

With Anzac Day only a hop, skip and a jump away it’s time to start whipping up some delicious Anzac biscuits ? Making these oat filled clusters of goodness is one of the traditions Australians follow for commemorating Anzac Day! And although I have ventured far from Australian borders I can’t help but fill my kitchen with the heavenly scent from baking your own Anzac bikkies ?

Traditional biscuits are often laddened with butter, refined sugars that come from lashings of golden syrup and brown sugar and processed white flour. Iโ€™m happy to announce that these biscuits are dairy free, wheat free, gluten free, egg free, vegan, and naturally sweetened โค๏ธ

 

1/2 cup gluten free whole rolled oats
1/2 cup shredded coconut
1/4 cup raw almonds
2 tbsp 100% pure maple syrup
1 tbsp melted unrefined coconut oil
1 tbsp hot water
1 tsp baking powder
1/4 tsp cinnamon powder
Pinch Himalayan salt

Preheat oven to 180 degrees and line a tray with baking paper.
Place the first 3 ingredients into a food processor and just pulse so not to completely break the oats or nuts. The mixture is processed enough when the almonds are roughly chopped. Turn out into a bowl and stir in the remainder of ingredients. Take a spoonful of mixture and roll into a ball. Place balls on baking tray and flatten with the back of a spoon. Bake for 20-25 minutes or until golden on the edges.

 

Leave to cool then enjoy ?
